This is a quick and easy no-bake cranberry pie. It can be made by following this basic recipe or the healthier version below!
For this month’s November recipe we are sharing a cranberry pie that uses dried cranberries. If you have leftover cranberry sauce or cranberry pie filling from Thanksgiving be sure to save it for this recipe. (I’ve also included some tips for how to use it.)
For this quick no-bake cranberry pie recipe, there are four main steps.
Step 1: Combine eggs, sugar, and orange zest in a bowl. Whisk until well combined.
Step 2: Then add the vinegar and 1 tbsp of flour. Mix until there are no lumps.
Step 3: Add the cranberries and mix until well combined.
Step 4: Pour the cranberry mixture into the pie shell and bake for around 20-30 minutes.
The bake time will depend on your oven. You can tell if it’s done by inserting a sharp knife into the middle. When the knife comes out clean it’s ready.
If you like more of a tart flavor, go ahead and sub blueberries for the dried cranberries.
If you’d like to make this pie healthier, use the following ingredients instead:
2 egg whites
1/4 cup sugar
1 tsp vanilla extract
1 tsp almond extract
1/2 tsp cinnamon
Bake the cranberry filling in a small cupcake pan.
I’ve also included a variation of this pie that is healthier and uses apples. To make this version, follow the recipe in this post and add 1/2 tsp ground ginger, 1/4 tsp cinnamon and 1 tsp lemon zest. It’s a great quick and easy breakfast!
